Ideal for large families, shared among multiple families, or anyone looking to stock up a year or more supply of beef. This is farm-to-freezer at its finest, completely tailored to your preferences.

What’s Included

All Steaks:
You receive every steak the animal can produce. This includes roughly 14–16 Ribeye steaks, 14–16 NY Strip steaks, 14–16 Filet Mignon medallions (or equivalent T-Bones/Porterhouses if you choose bone-in), 8–12 Sirloin steaks, 4 Flank steaks (2 per side), 2 Skirt steaks (1 per side), 2 Hanger steaks (one per animal), 4–6 Sirloin Tip steaks, 4–6 London Broil (Top Round) steaks, plus possibly some Denver or Chuck steaks depending on cutting style. In total, expect around 70–90 lbs of steak cuts, amounting to dozens of individual steaks. You can decide how they’re cut: thickness, bone-in vs boneless, and more. Ever dream of having an extra thick cowboy-cut ribeye? Or want your tenderloin left whole as a roast? With a whole beef, it’s your call. This is a steak lover’s paradise – you’ll fill an entire freezer shelf (or two) with beautiful steaks.

All Roasts:
You get all the roasts and large cuts: 4–6 Chuck Roasts, 2 Arm Roasts, 2–4 Rump Roasts, 2 Sirloin Tip Roasts, 2 Brisket pieces (or one whole brisket ~10+ lbs), 2 Tri-Tip roasts (one per side, if not cut into steaks), and more. Total roast and brisket weight is typically ~60–80 lbs. If you prefer more steaks, many of these cuts (like tri-tip, sirloin tip, etc.) can alternatively be cut into steaks – it’s up to you. A whole beef gives you flexibility: for example, you could turn some chuck into chuck steaks or burger meat if you wanted fewer roasts. We’ll guide you through the options. No matter what, you’ll have a substantial amount of hearty cuts for slow cooking and barbeque.

Short Ribs, Shanks, and Other Cuts:
A whole beef provides approximately 20–30 lbs of miscellaneous cuts like Short Ribs, Shanks (Osso Buco), Back Ribs (from the rib primal, if you want them), and Stew Meat. For instance, you’ll have short ribs from both sides (which could be 8+ lbs total), 4–6 slices of beef shanks, and plenty of trim that can be cubed as stew meat (~10+ lbs). If you’re a fan of certain cuts – like wanting all shanks left whole for Osso Buco, or preferring them deboned and ground – that’s entirely your choice. Many whole-beef customers love getting all the bones for broth. You’ll receive a generous bag of marrow or soup bones if you’d like. Essentially, nothing is left behind when you buy the whole animal.

Ground Beef:
Approximately 150 lbs of ground beef comes from a whole steer. This number can vary slightly depending on how you cut the animal. If you decide to turn more roasts or flank into grind, the ground beef total will increase; if you opt for maximum steaks and roasts, the ground will be a bit less (but still well over 100 lbs). Generally, expect about 150 one-pound packages of ground beef. We can have the butcher patty some of this (for example, into 1/3 lb hamburger patties, perfect for grilling). With a whole, patty-making is often included or available at a modest extra cost – we’ll discuss options at your cut consultation. Ground beef is the workhorse of the kitchen, and you’ll have an abundant supply for chili, burgers, and quick meals. Many customers keep a separate small freezer just for the ground beef when purchasing a whole!

Organs, Offal & Extras:
As the sole owner of the animal, you have first rights to all the organ meats and extras. We will ask if you’d like the liver, heart, kidneys, tongue, and oxtail. If yes, we’ll have them cleaned and packaged for you (often at no additional cost). If there are parts you don’t want, you can decline them. Some folks also request the suet (beef fat) to render into tallow, or dog bones, etc. We’re happy to provide all of that. You can essentially take home the entire animal (minus hide, head, etc.). Nothing goes to waste unless you choose otherwise. This is a big benefit of buying a whole cow – you can utilize bones and organ meats for stocks, nutrient-dense dishes, or pet food as you see fit. We also dry-age the beef for about 14 days, so you benefit from that process across all cuts.


Freezer Space:
A whole beef will require a large freezer – about 16 cubic feet or more of space. Often, customers buying a whole steer will have an entire stand-up freezer empty and ready. About 350 lbs of meat is roughly equivalent to 7-8 large coolers full. It’s a significant quantity, but you’ll be stocked up for the long haul. Many large families or bulk planners use a whole over the course of a year or longer. Some also split a whole among 3-4 families, and we can butcher a whole into quarter increments if needed for sharing.

The listed price of $987 is a 25% deposit to reserve your beef. The remaining $2,963 will be due at pickup or delivery.
