Quarter Beef Share Deposit – Approx. 90 lbs of Premium Beef [Deposit Only]

Enjoy a sizeable supply of our farm’s beef without needing a full deep-freeze. A Quarter Share is ideal for small families or first-time bulk buyers who want quality meat on hand year-round, at a lower cost per pound than our small boxes.

Estimated Yield: ~90 lbs of packaged beef (a quarter of a full steer’s cuts)

What’s Included: This is 1/4 of a steer, so you receive a proportional mix of cuts from both the front and hind quarters. Here’s the approximate breakdown for a quarter share (actual cuts & weights may vary slightly, but totals will be equivalent):

Steaks: ~20–25 lbs of steaks. This typically includes prized cuts like Ribeye Steaks (about 2–3 per 1/4), NY Strip or T-Bone Steaks (2–3 pieces), Sirloin Steaks (2–3 pieces), plus some Round Steaks or other variety (e.g. Flat Iron, Skirt or Flank if available). You can expect around 8–12 individual steak cuts in total, adding up to roughly 20+ lbs. (Example: A quarter might have ~7-8 lbs of rib/strip steaks, ~4 lbs sirloin, ~3-4 lbs round steaks, ~1-2 lbs misc steaks like flank/flat iron.) All steaks are vacuum-packed and labeled.

Roasts: ~15–20 lbs of roasts. Common roasts in a quarter include Chuck Roasts (usually 2 large chuck roasts, ~3 lbs each), Rump Roast (1 or 2 of ~2–3 lbs each), and a Sirloin Tip Roast (~3 lbs). Occasionally a portion of Brisket is included here as well (half of a brisket ~4 lbs). In total you’ll have about 5–6 roasts of assorted types – great for slow-cooker meals, BBQ, or slicing for sandwiches.

Short Ribs & Stew Meat: ~5 lbs combined. We ensure each quarter gets some slow-cook cuts. Often this will be Short Ribs (around 2 packages, ~2 lbs total) and Beef Stew Meat (diced lean beef, ~2–3 lbs). Alternatively, you might receive Osso Buco (Shank) or soup bones in place of some stew meat, depending on butcher availability. Total of miscellaneous bone-in cuts ~5 lbs. These cuts make amazing braises, stocks, or stews.

Ground Beef: ~35–40 lbs of ground beef. This is the single largest component of a quarter share – all the trim from your quarter gets ground, yielding roughly 35+ one-pound packs of ground beef (If you prefer some of this made into patties or bulk 2 lb packs, let us know; otherwise, it’s standard 1 lb chubs.) Our ground beef is flavorful and lean (~80/20). Expect to fill a small laundry basket with just the ground packs – taco nights and BBQs are covered for a long time!

Other Items: Soup Bones or Marrow Bones – we try to include a few pounds of meaty soup bones or knuckle bones in quarter shares if desired. These are great for making broth. Organ Meats – generally not included in a quarter share unless requested and available (since each animal only has one liver, one tongue, etc., these are optional extras on a first-come basis). If you want liver, heart, or tongue, please tell us – if the other quarter of your half doesn’t want them, we can provide them to you. Otherwise, they often go to half/whole customers.

Everything in the quarter share comes labeled, vacuum-sealed, and frozen for your convenience. In total you’ll receive about 90 lbs of beef, which will fill ~4 cubic feet of freezer space (about 1/4 of a large chest freezer). It’s a great stockpile for roughly 6+ months of meals for an average family (or longer, depending on your usage).
