Our Half Beef Share is the best choice for families who eat beef regularly or those who want to maximize value. You’ll get an even greater variety of cuts and a lower cost per pound. This option fills a dedicated freezer with locally raised goodness – say goodbye to grocery store beef for the next year!
Estimated Yield: ~175 lbs of packaged beef (half of a whole steer’s cuts)
What You’ll Receive: When you buy a half, you get one entire side of the animal. This means every type of cut from nose to tail on that side, divided into roughly:
Steaks: About 35–45 lbs of steaks in total. A half share includes all the prime steaks from both the rib and loin: typically around 6–8 Ribeye steaks (or Ribeye fillets if you prefer rib roast portions), 6–8 NY Strip steaks (and 2–4 Filet Mignon from the tenderloin, or you can opt to have T-Bone/Porterhouse which combine strip+filet), plus 6–8 Sirloin steaks. You’ll also get other steaks like Flank, Skirt, Hanger, Flat Iron, and Sirloin Tip steaks. Essentially, every steak the animal can produce will be in your half. The exact number varies with cutting style, but you can expect a large assortment – from premium grilling steaks to leaner marinating steaks. (We provide guidance if you want certain steaks cut a particular way.) Example breakdown for a half: ribeye steaks ~10 lbs, strip/filet or T-bones ~10 lbs, sirloin ~8 lbs, round/other steaks ~8 lbs, etc., totaling ~40 lbs. It’s a steak lover’s dream – plenty to savor and enough to share at cookouts.
Roasts: About 30–40 lbs of roasts. This includes multiple Chuck Roasts (usually 4–6 chuck/arm roasts, around 3 lbs each), Round Roasts (top/bottom round roasts, or they can be cut into London Broil – your choice), Sirloin Tip Roast (one large ~3-4 lb), and Brisket (you get the whole brisket ~8–10 lbs, or we can cut it in half). In a half you receive the full brisket from that side and several meaty roasts that are perfect for crockpot, smoking, or oven roasting. If desired, some of these larger cuts can be portioned into smaller sizes – just let us know on the cut sheet.
Short Ribs & Stew Meat: Approximately 10–15 lbs total. You’ll get a generous amount of Short Ribs (often 4–6 packs, since each side has a section of short ribs) and Beef Shanks (Osso Buco) slices – these are great braised or for stock. Any trim that isn’t ideal for steaks/roasts will be cubed as Stew Meat (~5+ lbs). So you have plenty of slow-cooker friendly cuts. (If you prefer, we can turn shanks into more ground or stew meat – it’s your call at half share.)
Ground Beef: 80+ lbs of ground beef. Yes, you’ll have roughly 80 to 90 one-pound packs of ground beef coming from a half steer. Our processor can also make some into patties if you want (typically a small extra fee, but for large orders sometimes included – we can discuss). Ground beef is the largest single component of a half, since it includes trimmings from the entire side. You’ll be well-stocked for making burgers, casseroles, sauces, and more. (Tip: With this much ground, many customers dedicate a shelf or two in their freezer just for the ground packets.)
Other Items: With a half you have the option to get all the extras from that side. This includes Soup Bones (Marrow Bones) – usually a bag or two of bones for broth, Oxtail (1 oxtail per half, if you want it), Liver (one liver per animal, so half a liver – we can include if you like organ meats), Heart, Tongue, Kidneys, Suet (fat) – all these are available to half-share customers upon request. If you’re not interested in organs or soup bones, you can let us know to omit them (some people don’t have the freezer space or preference). But they’re essentially free add-ons that come with your half if you want the nutrition or cooking adventure they offer. Nothing goes to waste! We also include any specialty cuts like hanger steak (1 per half) – you get it by default in your half share unless you tell us otherwise.
In total, the half share fills about 8+ cubic feet of freezer space (roughly a small chest freezer). It’s a lot of beef – roughly 175 lbs – which for many families can last 12 months or more. The beauty is you have a full selection of cuts at your fingertips: whether it’s a quick weeknight meal (grab some ground beef), a special occasion (filet mignon dinner), or a slow Sunday roast, you’re set.

The listed price of $538 is a 25% deposit to reserve your beef. The remaining $1,612 will be due at pickup or delivery.
